Carrot Cake

Description

Carrot cake is cake that contains carrots mixed into the batter. Most modern carrot cake recipes have a white cream cheese frosting.

Ingredients for Carrot Cake:

  • 3 cups grated carrots (~460g)
  • 21/2cups of flour
  • 2 tsp cinnamon powder
  • 1/4 tsp allspice (optional)
  • 1 tsp salt 
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 3 large eggs 
  • 1 cup oil
  • 1 cup crushed pineapple
  • raisins, walnuts (~ 1 cup+1 tbsp flour)

For Cream Cheese Frosting:

Ingredients:

  • 90g Irani cream cheese
  • 0.8 cups icing sugar
  • 1/4 cup unsalted butter

Method:

  • Whisk till fluffy.

Method for Preparation of Carrot Cake:

01Sift together flour, baking powder, baking soda, cinnamon, allspice and salt.

02In another bowl, beat eggs with the sugars till fluffy.

03Add in the oil gradually while beating the mixture.

04Fold in the sifted ingredients.

05Mix in your grated carrots and add raisins and walnuts mixed with flour to help them incorporate into the batter.

06Bake in a bundt pan or in three 8 inch round pans at 180° C for 25-30 minutes.

07Serve with cream cheese frosting.
