Rice Dish


Biryani is a mixed rice dish originating among the Muslims of the Indian subcontinent. It is made with Indian spices, rice, and meat.

Mutton Biryani Recipe

Ingredients for Mutton Biryani:

  • 2 kg mutton
  • 2 kg rice
  • Glass of water
  • 1/2 kg onions
  • 3 pieces of black cardamom and cinnamon sticks
  • 15 cloves of garlic
  • 1 tbsp salt
  • 1 tbsp turmeric powder
  • 1 tbsp red chili powder
  • 2 tbsp cumin seeds
  • 3 tomatoes
  • 3 tbsp biryani masala
  • 5 tbsp yogurt
  • 7-8 pieces star anise
  • 3-4 pieces of bay leaves
  • Lemon, 3-4 green chilies, and mint
  • Food coloring (red and yellow)

 Method for Preparation of Mutton Biryani:

01Put the mutton in a pot and pour the glass of water in it. Add the onions, black cardamom, cinnamon sticks, garlic, salt and turmeric powder.

02Give it a good stir and then cover the pot with a lid and leave it on flame for half an hour.

03Soak the rice for some time while the mutton gets cooked.

04After half hour, add red chili powder, cumin seeds, tomatoes and biryani masala. Mix well.

05Add a cup of cooking oil to the pot. Put 5 tbsps of yogurt.

06In a separate pan, fry 1 onions till golden brown.

07In a separate pot, half-filled with water, add star anise and bay leaves. Once the water is boiled put the soaked rice into the pot. Add 3 tbsp of salt.

08Cook the rice till nearly done.

09Now, for the base of the biryani, add some leftover/extra oil from the mutton masala in a pot. Spread a layer of rice. Add yellow and red coloring evenly to the rice.

10Add some lemon, green chilies and mint. Now add a layer of mutton. Add some fried onions on top of the meat.

11Repeat the same process of adding layers. First rice, then coloring, then lemon, green chilies and mint, then mutton and fried onions at the end.

12Add the leftover rice at the top. Cover the pot with a lid and let the rice cook for 15-20 minutes.

13Your mutton biryani is ready, give it a good stir and serve with raita. Enjoy!
