01Firstly. dry the milk and grated carrots on high flame.
02In a bowl, beat the eggs along with sugar, ghee, cardamom and cook in a separate pot.
03Once the mixture curdles, add the milk and carrot mixture.
04Now keep stirring with eggs until ghee separates.
05Color should be sustained as it is cooked on high heat.
06Garnish with khoya or barfi if available.
This is a large quantity recipe, you can always reduce the quantity of the ingredients by half or one-third in order to decrease the quantity.
