Description

These miniature kebabs are popular all over South-East Asia. Chicken Satay is a regular ingredient of Malaysian Restaurant Menus across the world.

Ingredients for Chicken Satay with Peanut Sauce Recipe:

  • 4 skinless, boneless chicken breast portions

Ingredients for the marinade for satay chicken

  • 2 garlic cloves, crushed
  • 2.5 cm/1-inch piece fresh root ginger, finely grated
  • 10ml/ 2 tsp Thai fish sauce 
  • 30ml/2 tbsp light soy sauce
  • 15ml/ 1 tbsp clear honey

Ingredients the Satay Sauce Recipe

  • 90 ml/6 tbsp crunchy peanut butter
  • 1 fresh red chilli, seeded and finely chopped
  • Juice of 1 lime
  • 60 ml/ 4 tbsp coconut milk 
  • salt

Method for Preparation of Chicken Satay with Peanut Sauce:

01First, make the satay sauce. Put all the ingredients in a food processor or blender.

02Process until smooth, then check the seasoning and add more salt or lime juice if necessary.

03Spoon the sauce into a bowl, cover with clear film (plastic wrap) and set aside.

04Using a sharp knife, slice each chicken breast portion into four long strips.

05Put all the marinade ingredients in a large bowl and mix well, then add the chicken strips and toss together until thoroughly coated.

06Cover and leave for at least 30 minutes in the refrigerator to marinate.

07Meanwhile, soak 16 wooden satay sticks or kebab skewers in water, to prevent them from burning during cooking.

08Preheat the grill (broiler) to high or prepare the barbecue.

09Drain the chicken strips. Thread one strip onto each satay stick or skewer.

10Grill (broil) for 3 minutes on each side, or until the chicken is golden brown and cooked through.

11Serve immediately with the satay sauce.
