Recipe Information

This recipe is very popular in Pakistani households and is often prepared on rainy days, serving the guests and during Iftar. The pakora coating (chickpea powder paste) is very healthy and nutritious for diabetic patients. The snack goes well with chutney (sauce made with tamarind). The snack can also be served with tea along with sweets and desserts. 

List of ingredients  for this recipe:

  • Eggplant
  • Carrom Seeds
  • Salt, Red Chilli Pepper Dried Fenugreek (optional)
  • Gram Powder (Chickpea Power). Can be replaced with Pakora mix available in Pakistani Stores. 

Preparation Steps

1. Pour some gram powder into a container. Add water to make a uniform paste. 

2. Add salt, red pepper, coriander powder, carom seeds for flavouring

3. Heat the oil in a work or a wide pan.

4. Slice eggplant sidewise to make thin round strips. 

5. Dip the eggplant the gram powder paste and deep fry till the Pakoras turn light brown on both sides. Do not overcook.

6. The Pakoras can be eaten with mint sauce.
