Thai Green Curry Chicken

Green curry Chicken is one of my favourite Thai dishes. The sweet and spicy taste of the curry paste and fresh vegetable makes a perfect blend for lovers of Thai food. Sydney has a number of great Thai restaurants and I have tried this dish at Chat Thai, Thai Patong, Atom Thai and one of my all-time favourite every day joint Thai on Wok in Sydney. 


Here is how I prepare my favourite Thai Green Curry Chicken at home

Ingredients for Thai Green Chicken Curry

  • 500-gram Thai pieces of Chicken
  • Thai Green Curry Paste ( easy to find on the shelves)
  • Chicken Broth
  • Eggplant cut in cubes
  • Fish Sauce
  • Palm Sugar
  • Coconut milk 400ml

Cooking Steps for Thai Green Curry


  • Heat two spoons of oil in a wok
  • Add two tablespoonfuls of Thai curry paste and stir until fragrant
  • Add coconut milk and cook for 4 minute
  • Add pieces of chicken meat and cook until the meat become tender
  • Add eggplant cubes and add half a cup of chicken broth
  • Cover and let it simmer for 5 minutes
  • Put basil leaves on the mix and serve 

Voila !!! you are ready to go with home-cooked Green Curry Chicken. Serve with white rice.
