Description

Oyster sauce describes a number of sauces made by cooking oysters. Combining it with beef, and you can experience a taste you've never experienced with beef.

Ingredients for Beef with Oyster Sauce:

  • 350g or 12 oz rump (round) steak
  • 15ml/ 1 tbsp vegetable oil
  • 300ml/ 11/4 cups beef stock
  • 2 garlic cloves, finely chopped
  • 1 small carrot, thinly sliced
  • 3 celery sticks, sliced 
  • 15ml/1 tsp caster sugar
  • 45ml/3 tbsp oyster sauce
  • 5ml/1 tsp cornflour
  • 15ml/1 tbsp cold water
  • 4 spring onions (scallions), chopped ground white pepper
  • rice or noodles, to serve

 Method for Preparation of Beef with Oyster Sauce:

01Slice the steak thinly. Place the slices in a bowl, add 1 tsp of the vegetable oil and stir to coat.

02Bring the stock to the boil in a large pan. Add the beef and cook, stirring, for 2 minutes.

03Drain, reserving 3 tsp of the stock, and set aside.

04Heat the remaining oil and stir-fry the garlic for a few minutes.

05Stir in the sherry, caster sugar, oyster sauce and a large pinch of pepper.

06Add the steak to the pan with the reserved stock. Simmer for 2 minutes.

07Mix the cornflour with the water. Add the mixture to the pan and cook, stirring, until thickened.

08Stir in the spring onions, mixing well, then server at once, with rice or noodles.

Substitution:

  • To increase the number of servings, add more vegetables, such as peppers, mangetouts (snow peas), water chestnut, baby corn on the cob and mushrooms.
