Kulfi is basically an Indian ice cream that is usually made by slow cooking milk, then adding some mashed bread, condensed milk, almonds or pistachios, and viola! You have made yourself a delicious, milky kulfi ice cream! However, nowadays there are lots of ways you can make kulfi.

Traditionally, kulfi is served in small clay pots which are stored in a large container with lots of ice and salt so that they can be frozen to perfection! You can make kulfi at home too and you don't need to make it the old-fashioned way either. All you need is some moulds and a freezer where you can freeze the ice cream.

Kulfi is a royal dessert, consists of saffron, and a variety of dry fruits as well. If you ever visit Pakistan during summers, you would see a kulfi cart in almost every popular area. It is the ice cream of preference for the locals in Pakistan as well as in India. It is super cheap too! The price usually varies from 30-100 PKR depending upon the size which is equivalent to less than 50 cents!

Ingredients for Kulfi Recipe:

  • 1 tin condensed milk (390 grams)
  • 2 liters of milk
  • 2 slices of milk bread
  • A small amount of saffron
  • Almonds and pistachios (to your liking)

How to make Kulfi:

As delicious as it looks, kulfi is actually fairly simple to make! It does not require any sort of ice cream maker.

01In a pot, bring 3/4 of the milk to a boil.

02While the milk is boiling, cut off the hard edges of the milk bread slices, then mash the slices properly in the remaining 1/4 of the milk.

03Add this mixture to the boiling milk.

04Cook the milk mixture on a medium flame for a few minutes till it starts to thicken.

05When it thickens, add the condensed milk, saffron, almonds, and pistachios. The last three ingredients are to be added to your liking. Whether you add them or not, it is up to you.

06Cook for another few minutes on low flame. Turn the heat off and leave the mixture to cool down for some time.

07Now pour this mixture onto the kulfi moulds. Freeze and enjoy!
